Root vegetable mash

Healthy and delicious, this dish is ideal for people on a soft or pureed diet. 

Serves 6. Preparation time: 20 minutes. Cooking time: 1 hour.


  • 600g root vegetables (for example parsnip, swede or celeriac)
  • 300g carrots 
  • 300g potatoes 
  • 50g butter


  1. Peel and cut all vegetables into 1-inch (2.5cm) cubes.
  2. Bring the root vegetables to the boil in a large pot, then boil for 20 minutes.
  3. Add the carrots and boil for a further 10 minutes.
  4. Add the potatoes and boil for a further 15 minutes.
  5. Strain the vegetables through a colander – all the veg should now be soft enough to mash.
  6. Return the veg to the pot, add butter and mash with a hand masher until smooth.
  7. Season to taste and serve.
