- Peel and cut all vegetables into 1-inch (2.5cm) cubes.
- Bring the root vegetables to the boil in a large pot, then boil for 20 minutes.
- Add the carrots and boil for a further 10 minutes.
- Add the potatoes and boil for a further 15 minutes.
- Strain the vegetables through a colander – all the veg should now be soft enough to mash.
- Return the veg to the pot, add butter and mash with a hand masher until smooth.
- Season to taste and serve.
