Amaretti stuffed peaches

Serves 4. Preparation: 5 minutes. Cooking time: 20 minutes. With thanks to Waitrose for contributing this recipe.


  • 4 ripe peaches, halved and stoned
  • 8 Amaretti biscuits, crushed
  • Mascarpone (4 tbsp)
  • Brandy or orange juice (2 tbsp)

To serve:

  • Vanilla ice cream


  1. Preheat oven to 200°C/180°C fan/gas mark 6.
  2. Arrange the halved peaches cut side up in a shallow ovenproof dish to fit snugly.
  3. Mix the biscuits with the mascarpone. Spoon into the cavities of the peaches and sprinkle with the brandy or orange juice.
  4. Bake for 15–20 minutes until tender, and serve warm or cold with vanilla ice cream.
