Recipe idea for Christmas

Christmas Rocky Road (Makes 24 squares)

Ingredients

  • 250g/9oz dark chocolate
  • 150g/5oz milk chocolate
  • 175g/6oz soft butter
  • 4 tbsp golden syrup
  • 200g/7oz digestive biscuits
  • 150g/5oz shelled Brazil nuts
  • 150g/5oz red glacé cherries
  • 125g/4½oz mini marshmallows
  • icing sugar and edible glitter (to decorate)

How to make

  1. Break the chocolate into a heavy-based saucepan, melt over a low heat, then add the butter and syrup.
  2. While melting, put the biscuits into a sandwich bag and break into different sized pieces.
  3. Next put the Brazil nuts into an electric mixer or sandwich bag, and break into small chunks.
  4. Take the pan off the heat and add the biscuits, nuts, cherries and marshmallows. Mix until combined.
  5. Line a disposable foil tray or baking tray with a double layer of cling film, making it easier to remove the Rocky Road later.
  6. Spoon the mixture into the tray and even out.
  7. Put in the fridge until firm (for about one to two hours).
  8. Take out of the fridge and remove block from tray. Peel back and remove the cling film.
  9. Dust icing sugar over for snow and sprinkle the edible glitter.
  10. Cut into squares (around 24 medium-sized squares).
